Super Yummy Recipes

One of my favorite super yummy recipes is chocolate chip bar cookies. This is a perfect recipe if you only have a few minutes to prepare an easy and delicious dessert. It is a favorite of my family and I have prepared it for guests many times. If there are leftovers, it packs well for lunches. It is a chocolate chip cookie recipe that I have adapted for bar cookies. Individual chocolate chip cookies take me too long to portion out perfectly, so this is an alternative.

This delicious recipe can be pulled together in five minutes and cooked for 35-40 minutes and will be baked while you do other needed tasks. You might be able to use this if you have unexpected guests like I talked about in this blog post Best Recipes for Unexpected Guests. This recipe calls for simple ingredients and they are ingredients that you probably already have stocked. The only thing that tastes better than these bar cookies is serving them alongside a scoop of ice cream. 

Prepping for these cookies is easy. One thing I do each time to make life easier is to use parchment paper to line my 9-inch X 12-inch pan. This makes it easy after baking time to lift bar cookies out and transfer to a countertop to cut into your preferred bar size.

It is important to note that it does not matter what time of year you prepare these cookies. They are one of those super yummy recipes that are as good in the Summer as they are in the winter. Since it heats up my kitchen, I usually do more baking in the mornings during the Summer. In the Winter when I want a little more warmth in my kitchen, I bake these anytime. 

Simple Ingredient List

2 sticks of butter, softened. Allow them to soften at room temp, microwaving changes the consistency too much. 

1 cup of granulated sugar

1 cup of packed light brown sugar

2 large eggs

1.5  tsp of vanilla extract

3 cups of all-purpose flour 

1 teaspoon of baking soda

½ teaspoon salt

2 cups of semi-sweet chocolate morsels

Instructions:

1. Preheat oven to 375 degrees Fahrenheit . 

2. Next, in a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.

3. Beat in eggs, one at a time. 

4. Next, stir in vanilla extract.

5. In a separate bowl, combine the flour, baking soda, and salt. Gradually add these dry ingredients to the wet ingredients. 

6. Finally, stir in the chocolate chips

7. Place dough into a parchment paper-lined 9 X 12-inch pan. Next try to allow enough parchment paper on the sides to be able to lift cookies out when finished. Ensure the dough is gently pressed into the pan. I sometimes use a piece of waxed paper to gently press dough into the pan. 

8.Finally, the cookies are ready to bake in preheated oven for 30-35 minutes. They are done when the center appears set and the edges are lightly browned. Remember, they do firm up when cooling. 

9.Next, ensure you allowing the pan to cool on a wire rack. When completely cooled, gently lift the cookie using the parchment paper out of the pan. It is easy to cut into pieces.

Tips

In addition to eating them shortly after cooling, these bar cookies keep well for later. If eating later, they do get more dry as times goes by. If they are too dry when you decide it is time to try them, you can pop them into the microwave for about 30 seconds or alternatively I dunk them into my milk! These chocolate chip bar cookies keep well if stored in an airtight container at room temp. I will warn you. At our house they go quickly.

​I can promise you will enjoy the rich flavor of these easy bar cookies. They store well and travel well. They are one of my most requested recipes from family and friends. I love all recipes that allow me to use some of the eggs from our hens. 

Lastly, I do make a couple of substitutions if needed. Consequently, If I do not have semi-sweet chocolate morsels, I have used milk chocolate or butterscotch morsels.

Finally, I have used both salted and unsalted butter in this recipe. I did make the mistake once of microwaving my butter to quickly soften it. That was a mistake. It changed the consistency of the batter and the cookies once baked.

These chocolate chip bar cookies definitely qualify as one of the best super yummy recipes! They are easy to prepare. They taste so good and they are easy to store if you have any leftovers.
